Meatless Monday: Avocado Toast With a Twist

Hello everyone!  I am sure that you know by now that I am a vegan, (I promise I am a nice vegan though).  Throw out all of your misconceptions about vegans being aggressive assholes that eat grass because that couldn’t be further from the truth, (at least in my case, I don’t personally know any other vegans).

I have been very happy to discover the popularity of “Meatless Mondays” even though everyday is meatless for me, it is exciting to see so many other people limiting their meat consumption in an effort to be healthy and help the environment!  I am so inspired by the “Meatless Monday” trend that I am starting a series of meatless recipes that will be up every other Monday!  I hope that you all will follow along and that you enjoy some of these healthy (mostly healthy) vegan recipes!

My first recipe of this series makes up about 90% of my diet, and that would be avocado toast.  There are so many ways to create and customize avocado toast that everyone can find a combination of what they love.

The bread that I typically use and love is Ezekiel Bread the original sprouted that comes in an orange bag and is vegan!  This bread is also considered a complete protein.  Ezekiel bread can be difficult to find in some states so I put a link to order here.

I have compiled a list of some delicious sounding recipes, some are my images and recipes but there are some from other bloggers that I made sure to give credit to and linked their recipes and images to their original post!

2.  Avocado Chickpea Toast from Living Well Kitchen

Avocado Toast

This is a great way to dress up avocado toast but still keep it simple!  All you need is a can of chickpeas, lemon juice, and some spices, (and obviously toast and avocado).

 

3.  Southwestern Avocado Toast from My Whole Food Life

Vegan

This is another easy way to make your avocado toast a bit more interesting!  You basically make some fresh salsa and sprinkle it on your avocado toast! P.S. The Eureka sweet bread is delicious and vegan!

4. My personal favorite is not as aesthetically pleasing as these other delicious combinations but it is just as tasty!  Avocado sprinkled with chia seeds and nutritional yeast!
